Ingredients
500g cucumbers
3/4 tsp salt
2 tbsp coriander, roughly chopped
1/4 cup spring onions, sliced
Dressing
2 tbsp Rhubarb Vinegar
2 tsp toasted sesame oil
1 1/2 tsp fresh ginger, grated
2 tsp soy sauce
1 tbsp toasted sesame seeds
Method
Smash: Bash the cucumbers with the smooth side of a meat mallet, rolling pin or other heavy kitchen utensil until they split open along the sides.
Cut: Cut the cucumbers into roughly 2.5cm chunks and place in a bowl.
Salt: Sprinkle with salt, toss to combine and leave for 20 minutes. Drain off any excess liquid.
Mix: Combine the Rhubarb Vinegar, sesame oil, ginger and soy sauce and mix well.
Serve: Drizzle the dressing over the cucumbers, add the coriander, spring onions and sesame seeds and toss to combine. Serve immediately.
