Rhubarb & Raspberry Waffles

Ingredients

Waffles

  • 2 cups self-raising flour
  • 2 tbsp caster sugar
  • 2 eggs
  • 1 3/4 cups milk
  • 100g butter, melted
  • 1 tsp vanilla extract

To Serve

  • Rhubarb & Raspberry Jam
  • Cream (or Ice Cream)
  • Fresh Berries
  • Icing sugar, for dusting

Method

Mix: In a large bowl, whisk together the flour and sugar. Add the eggs, milk, melted butter and vanilla, whisking until smooth.

Cook: Preheat and lightly grease a waffle maker. Pour in the batter and cook until golden and crisp.

Serve: Top warm waffles with generous spoonfuls of Rhubarb & Raspberry Jam, cream and fresh berries. Finish with a dusting of icing sugar.


Perfect for a lazy weekend brunch or an easy dessert everyone will love.
