Ingredients
Waffles
- 2 cups self-raising flour
- 2 tbsp caster sugar
- 2 eggs
- 1 3/4 cups milk
- 100g butter, melted
- 1 tsp vanilla extract
To Serve
- Rhubarb & Raspberry Jam
- Cream (or Ice Cream)
- Fresh Berries
- Icing sugar, for dusting
Method
Mix: In a large bowl, whisk together the flour and sugar. Add the eggs, milk, melted butter and vanilla, whisking until smooth.
Cook: Preheat and lightly grease a waffle maker. Pour in the batter and cook until golden and crisp.
Serve: Top warm waffles with generous spoonfuls of Rhubarb & Raspberry Jam, cream and fresh berries. Finish with a dusting of icing sugar.
