Method
Prepare
Cook rice according to packet instructions. Warm or slice the cooked chicken breast.
Assemble
Divide rice between bowls. Top with chicken, lettuce, tomato, roasted peppers and jalapeños.
Finish
Spoon over generous amounts of rhubarb chilli salsa. Scatter with corn chips and fresh coriander.
