Chicken Burgers

Ingredients

Burgers

500 g chicken mince

1 small onion, grated

1 small zucchini, grated

1 small carrot, grated

1 egg

½ cup breadcrumbs

1 tbsp Lana’s Garden Rhubarb & Tomato Chutney

Salt & pepper, to taste

 

To Serve

6 brioche buns

Lettuce leaves

Tomato slices

Cheese slices

Dill pickle slices

Extra Lana’s Garden Rhubarb & Tomato Chutney


Method

Mix: In a large bowl, combine chicken mince, grated vegetables, onion, egg, breadcrumbs, chutney, salt and pepper. Mix until just combined — don’t overwork the mixture.

Shape: Form mixture into 6 even patties. Place on a tray and chill for 10–15 minutes to firm up if time allows.

Cook: Heat a lightly oiled frypan or BBQ over medium heat. Cook patties for 4–5 minutes each side, or until golden and cooked through.

Assemble: Lightly toast brioche buns. Layer with lettuce, tomato, chicken patty, cheese, pickle, and an extra spoonful of chutney.

Serve: Enjoy warm, stacked high and bursting with flavour.
