Brie and Fig Toasts

Ingredients

• 1 baguette, sliced ½-inch thick

• 1–2 tbsp olive oil

• Salt & pepper

Rhubarb & Fig Jam

• 280g Brie

• Walnuts, toasted


Method

Toast: Brush baguette slices with olive oil, season with salt and pepper, and toast until lightly golden.

Assemble: Spread each slice with Rhubarb & Fig Jam, then top with a slice of Brie.

Warm: Return to the oven for 1–2 minutes, until the Brie just begins to melt.

Finish: Top with toasted walnuts and a crack of black pepper.
