Hot Cross Buns

Ingredients

Buns

  • 9g instant Yeast
  • 110g cup Caster Sugar
  • 373ml warm Milk
  • 640g Flour
  • 2 tsp. Cinnamon powder
  • 2 tsp. All spice
  • 1/2 tsp. Salt
  • 210g Sultanas
  • Zest of 2 Oranges
  • 50g Butter
  • 1 Egg

Crosses

  • 75g Flour
  • 5 tbsp. Water

Glaze

  • 1 tbsp. Lana's Garden Jam of choice
  • 2 tsp. Water

Method

  1. Mix Dry: Place flour, yeast, sugar, all spice, cinnamon, and salt in large bowl. Briefly mix with stand mixer fitted with a dough hook.
  2. Add Wet: Add butter, milk, egg, sultanas and zest.
  3. Standmixer: Mix for 5 minutes until a smooth elastic dough forms. Start on low speed and once ingredients are combined, increase speed. After 1 minute, add extra flour if required, just enough so dough comes away from side of bowl when mixing and doesn't stick terribly to your fingers. Alternatively, knead by hand for ten minutes. Dough is kneaded enough when it's smooth and does not break when stretched.
  4. Rise #1: Leave dough in bowl, cover with a damp teatowel and place in a warm place to rise until doubled in size.
  5. Form Buns: Line a tray with baking paper. Punch dough to deflate. Dust work surface with flour, and shape dough into a log. Cut into 12 equal pieces. Take one piece and roll into a ball. Place the ball on the tray and repeat with remaining dough.
  6. Rise #2: Loosely cover the tray with a damp teatowel and return tray to warm place. Leave until nearly double the size.
  7. Crosses: Mix flour and water until a thick runny paste forms. Pipe crosses onto the buns.
  8. Baking/Glaze: Bake in a preheated oven (180°C) for 22 minutes, or until golden brown. Meanwhile place jam and water in a bowl, microwave for 30 seconds and mix to combine. Remove buns from oven and brush with jam mixture while warm.
  9. Enjoy: Cool slightly before enjoying with lashings of butter and Lana's Garden Jam!
